Tasting Notes

ENDLESS shiraz features dark purple and garnet hues, scintillating aromas and rich flavours of plum, blackberry, mulberry, anise, spice and black pepper all drawn out with tannins of dry black tea.

After a winter of moderate rainfall, Heathcote’s growing season was mostly warm and dry. Frosts during flowering kept yields below average. Extreme condition in January and February required us to get our act into gear for picking a few days earlier than usual. The grapes produced were vibrant and fresh, and lip-smackingly moorish.

The brief here is simple; to produce a Shiraz that has that elusive balance of power and concentration with elegance and grace. To achieve this, we get out of the way and let the fruit do its stuff.
No winemaking artifice, just pure expression of Heathcote Shiraz. The clean fruit is crushed and run to fermenting tanks where we let the wild yeast in the winery take hold and kick off the ferment. With Shiraz we prefer a longer slower ferment where we get even flavour and colour extraction without over-doing it. Once pressed we run the wine to mainly French and a little bit of American hogsheads where it spends the next 12 months.
